Blueberries Almond Pancakes

About the Recipe

These fluffy pancakes are full of blueberries but you can add your other favorite mix-ins like coconut, chocolate chips, nuts, and more!

Ingredients

  • 1/2 cup almond flour

  • 2 tbsp coconut flour

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1-2 tbsp granulated sweetener of choice

  • 3 flaxseed or chia eggs (3 tbsp of chia or flax with 6 or 7 tbsp water)

  • 1/4 cup plant milk of choice

  • 1/4 cup blueberries fresh or thawed frozen ones work best

Preparation

Blend all ingredients except blueberries.
If the batter is too thick, add more liquid.

Preheat a large non-stick pan over low-medium heat. Ensure the pan is greased. Once hot, Pour 1/4 cup portions of the batter onto the pan and add the blueberries on top of each pancake . Let them to cook for 2-3 minutes until the edges go golden before flipping and repeating.

Once ready, topped with almond butter, fresh blueberries , cashew yogurt & hemp seeds.
